Pyrolave at Jacobi Restaurant: volcanic elegance at the heart of the Black Forest
Nestled in the heart of Freiburg, in Germany’s iconic Black Forest region—renowned for having the highest concentration of Michelin-starred restaurants per square meter in Europe—the Jacobi restaurant stands out with its understated refinement and its chef, Christoph Kaiser, awarded one Michelin star.
To elevate this exceptional venue, Boucherie Vollmert, Alexandre Greis (Pyrolave Germany) and Christoph Kaiser collaborated on the custom implementation of enameled lava tables for the restaurant.
Enameled lava : a living material at the service of gastronomy
At Jacobi, the table is more than functional—it’s the stage where the chef’s creations come to life. For this project, each table was handmade from volcanic stone, extracted from the Auvergne region in France and enameled with care in our Castelsarrasin workshop.
The result? A mineral, tactile and elegant surface, resilient enough for intensive daily use yet delicate in its visual and emotional presence.
The lava, sourced from the volcanoes of Auvergne, brings with it a living texture—subtly crazed and deeply expressive—a true artisan signature that reflects the tension between raw nature and the human hand.
A setting worthy of a Michelin star
The choice of materials in a fine-dining space must rise to the level of the experience. At Jacobi, the Pyrolave tables act as a silent partner to the chef’s vision—framing each plate with poise and texture, blending seamlessly into a space where design, taste and detail converge.
Freiburg : a region where excellence is the standard
In a part of Europe where gastronomic excellence is a way of life, the presence of Pyrolave enameled lava adds a new layer of sophistication. It’s a dialogue between French craftsmanship and German precision, between fire-forged stone and forest-rooted traditions.
A story of passionate collaboration
This project was also a story of encounter and vision—between our Pyrolave representative in Germany, Alexandre Greis, and chef Christoph Kaiser. Two crafts, two worlds, united by shared values: precision, passion, and a commitment to excellence.
A bespoke grey born from collaboration
For Jacobi, Pyrolave developed a custom color, known internally as GC3. This deep, smoky grey adds a quiet strength to the space, subtly reflecting light while allowing the chef’s dishes to take center stage. The tone is both contemporary and timeless, enhancing the architecture and honoring the soul of the cuisine served.
